• Assortment of golden beets, red beets, and chioggia beets (the stripes make a great presentation!)
• Olive oil
• Salt and pepper to taste
Cut greens off the beets and save for a later sautee. Rinse beets thoroughly to remove all dirt.
Wrap whole, washed beets in aluminum foil. Heat the oven to 375 and move rack to the center. Place wrapped beets on a cookie sheet and put in the oven.
Roast in the oven for 1-1 1/2 hours until tender. Remove and let cool. Here comes the messy part! Once they're cool, peel with a paring knife to remove skins and slice in rounds. Place on platter, drizzle with olive oil, and add salt and pepper to taste.
Beets are great as well when paired with a cheese such as blue or an herbed goat cheese.
