Tofurfy with Sweet Potatoes

• 1 Tofurkey, thawed and removed from plastic casing
• 3-4 satsuma sweet potatoes
• 1/4 C soy sauce
• 1/4 C orange juice
• brown sugar
• shallots

Place the Tofurkey in the middle of a loaf pan. (Use a larger pan if you want to make more potatoes.)

Peel and chop the satsumas into rough 1-inch or smaller chunks, placing these to either side of the tofurkey.

Peel the shallots. Remove each layer one at a time and flatten with your hand. Lay these strips over the top of the Tofurkey. (You can use toothpicks to hold them in place if you wish.)

Mix soy sauce and orange juice. Add brown sugar to sweeten to taste. Pour about 2/3 of this mixture evenly over the entire pan. Cover the pan with aluminum foil and roast in a 350F oven for about 45 minutes. Open the oven, and peel back the foil to pour on the rest of the basting mixture. Re-cover and continue roasting for an additional 30 minutes.

Baste according to package directions.
